Cheese Making-- Part Deux

So last night I opened my pot full of goat milk. I had let it sit for about 12 hours and at this point the curds were ready to be ladled into the cheesecloth. I then let it sit covered over night on the counter undisturbed. I placed a small bowl underneath the colander to make sure the curds were not sitting in the drained whey-- there would be no point to draining it if it was sitting in it.
Here is what it looked like when I went to bed:
Then this morning first thing I opened up the pot and voila-- sure enough there was chevre in the pot! I squeezed the cheese cloth and goat cheese a bit to get the extra moisture out-- it seemed a bit moist still, and it did seem to do the trick. 
 Here is a picture of the goat cheese this morning:
After squeezing out the excess moisture, I scooped the cheese into 2 bowls. One for plain, salted Chevre and one for flavored chevre. I decided to add Herbs de Provence to one of the bowls as well as salt to bring out the flavors. 

I then put the cheeses in 3 pint sized jars and I now  have freshly made goat cheese!

I am nearly blind without my contacts and eyeglasses. Take those off of me and I can't see a foot in front of me. I have had glasses since about 7th grade, but in the last 10 years, I have probably used my contacts the most and my eyeglasses only when I need to rest my eyes or at night. If you're aware of conditions in factory farms, even in some of the so-called "free range" farms, we needn't say more. If you're not, please research it. Factory farming is terrifyingly cruel. The good news is that by keeping a few pet chickens of your own, you're reducing the demand for store-bought eggs and sending a message to those factory farms that you don't want what they're selling.
The Very Definition of Low-Maintenance

Be the Coolest Kid on the Block
Despite their many merits, backyard chickens are still relatively uncommon. Wow neighbors, friends and family by being the first person they know to have chickens. Amaze them with the green eggs from your Ameraucana hens. Confound them by scooping up your pet chicken and cuddling it. Astound them when your chicken falls asleep in your arms after you've lovingly stroked its comb and wattles. Make them green with envy at the lawn your flock has made effortlessly fabulous.
Chickens are, after all, the most "chic" pet you could possibly have. And we think it's time everyone knew.
So I don't know if I will be stroking any waddles any time soon, but I am still really excited to give this a try! My husband came home with the chicken coop he built today. He's a handy guy-- take a look. He saw a picture of a coop he liked just yesterday, and today he came home with this! Do you have any suggestions on how to paint it? I am thinking perhaps white with green trim-- not sure though. Then I think I might get some flower boxes and pretty it up!
On the side shown, is where it opens up to the nesting boxes where they lay the eggs. Reach in and voila! Up on the top level is where they roost and lay their eggs in the nest boxes, then down below via ladder is the play area for them to hang out and have good ole' chicken time.

We have decided on buying 4 chicks from a local chicken breeder. We are going to get 2 Plymouth Barred Rocks and 2 Black Stars. Very unique in coloring if you ask me-- but I guess they are pretty common.

BLOG TITLE



April 24th and 25th--
We painted the coop today to match our house-- a nice page sage-y color with white trim.  The oldest chitin- not chicken, helped paint the coop and she was extremely helpful with the trim and small spaces. 
The husband put the finishing touches on the coop including; the roofing to keep out moisture, the sides complete with hinges, the cord to lift and lower the ladder to and from the run underneath, a thermometer for easy temperature viewing, some pavers for the underneath run, and lastly the pine shavings for the upstairs part of the coop. 
It all went well with little issue! Here are some pictures of the process and the finishing touches!


April 27th 2009--
So we officially have our chickens! Four cute pullets aged about 8 weeks old. Two Black Stars and two Plymouth Barred Rocks. They were a bit tired yesterday from the trek home and nervous from the new people and circling canines, but they seem to have adjusted pretty well now! This evening, after a full day and a half of basically hanging out upstairs in the roost, they have seemed to acclimate and come down. Even with the dogs around! They seemed to acclimate so well, that they wouldn't/couldn't make their way up the ladder to their beds for the night. With a little coaxing and nudging, husband finally got them in their rightful places. We would rather them be safe in the upstairs, than in the bottom portion in the coop at night. We will see how lenient we get with that.

Also my handy husband was back at it today-- He made a fan from a solar panel he had laying around. I attached a picture of a solar panel fan to provide air flow throughout the coop-- hopefully it should help in the out weather that is coming soon!


Here are some pictures of our newest additions. We haven't named the foursome, but we have some ideas-- Maude, Lucy, Ethel, and Estelle. What do you think?

Cheese Making

I have started in on a new delicious hobby. Well we'll see if it turns into a 'delicious hobby'-- I guess the word delicious is relative. I started to make homemade cheese! We have a great new store here selling raw milk and a goat's milk co-op I bought in on. I would love for some comments and suggestions-- heck-- even some recipes! Bring it on! I will make a new heading at the top labeled "Cheese Making," so check back often to see if there is any updates!

For my first cheese making experience, I tried my hand at 30 minute Mozzarella with the raw cows milk. It took shape nicely, and the flavor was good, but the texture was a bit rubbery. From what I have read online, the rubberiness comes from over cooking it during the pulling stage. hmmmmm not sure? Any advice, suggestions? Comment on this post!

As we speak I am waiting on my Chevre Goat Cheese to curdle. It takes about 12-20 hours. I am assuming the variation in time has to do with outside conditions; humidity, temperature? Here are some pictures of the process so far!

In case you have some goat cheese on hand, here is a handy recipe-- ENJOY!

Herb and Garlic Goat Cheese Dip

Goat cheese and low fat sour cream meld for a perfectly tangy and creamy dip that’s not too calorie-rich compared to most others. Make it ahead for a party or to spread on bagels or sandwiches.

5–6 oz fresh goat cheese
⅔ cup low fat sour cream
3 green onions (white and most of green part), chopped
1 TB chopped fresh parsley
1 TB fresh chopped basil
1 large or 2 small garlic cloves
sea salt and freshly ground black pepper
Place all ingredients in a blender. Pulse 1–2 minutes until well combined but not completely pureed. Refrigerate several hours or overnight to allow flavors to blend. Adjust salt and pepper to taste before serving.
Makes about 1¼ cups.

4TROOPS Combat Veterans signed to Sony Music

The towns of St. Augustine, Ponte Vedra and the Beaches have many, many exclusive resorts, bed and breakfasts, and hotels awaiting your arrival.
I think I would choose to stay at the St Augustine Beach Front Resort. It's an oceanfront hotel with island flair next to Anastasia State Park, just 4.7 miles from historic downtown. My Three Day Itinerary:
Day One: Check in at the St. Augustine Beach Front Resort. Then from there I think we would take a leisurely afternoon at the beach-- perhaps Ponte Vedra! Look at that scenery! 
Day Two: I would take the family on a historical day of sightseeing including the Ponce de Leon's Fountain of Youth Archaeological Park, and the cross of Mission Nombre de Dios.
And on our third and last day I think we would explore the many art galleries and famous shopping the towns have to offer. Bring back the great souvenirs for family at home!
